I thought rather than chatting about recipes and cooking techniques in the What's For Dinner/Lunch/Breakfast threads we could have a dedicated space for it.
This recipe came in my email this morning and it looks too good to keep to myself.
Grilled Caprese Sandwich
Makes 2
4 slices rustic white bread (I used an Italian Loaf)
Unsalted butter
1 cup cherry tomatoes
1 cup fresh bocconcini
A bunch basil
4 tablespoons extra virgin olive oil
Sea salt flakes
Generously butter the four slices of bread right to the edges. Turn them over so that the unbuttered side is facing up. Set two slices aside.
Tear up the bocconcini and place pieces on the unbuttered side of two slices of bread. Gently crush the cherry tomatoes, letting some of the seeds and liquid come out and discard the seeds and liquid. Put the squashed cherry tomato flesh on top of the mozzarella.
Place the basil leaves, salt and oil in a blender and blitz. Pour the basil oil over the tomatoes. You probably won't use all the basil oil for these two sandwiches, but it's great in pasta and soups or anywhere you would use fresh basil. Place the reserved slices of bread on top of the mozzarella/tomato/basil combo, buttered side out.
Heat a large frying pan over medium heat and place the sandwiches in. Fry until golden and the cheese is starting to melt. Turn the sandwich over and fry until the other side is golden.
And yes, I just told you how to make a sandwich.

I do like the Best Foods, though I'll go off now and then.
Recently I've been using the course ground sugar sold as "Mexican Sugar". I really like that.
Not sure about the tuna or cottage cheese.
Beaver extra hot horseradish.

The list looks fine to me but I prefer Alpenrose cottage cheese.

I got it from a "things to do in Timbuktu" site. Funny how a simple idea travels. A quick Google of the photo gets the recipe in Hungarian, Swedish and Welch.

Very open. I'm just bored with the places I go to. Mexican on Stewart St? Cheeseburger at Quality Market? Maybe something on Main St? Talent or Phoenix is okay too. Thanks

Jeep, options are limited in Medford. Cafe Dejeuner, usually gets it right and at least they are making it there.

I'm not being able to post, because it's coming up as forbidden. I'm posting my post one sentence at a time to figure it out.
By the way, Quality Market is not there anymore. However there is Jaspers which is consistently good but often crowded or outdoor seating and another really good little burger place next to the old Yellow Submarine Sandwich shop where the guys grind their own meat and frequently sell out before 3 pm. they are good. And the little Mexican place next to it, Tierra something, has great tacos.

There's Marigolds, where the old Azteca is. They make everything from scratch also. I went there once and it was ok. (they didn't know what a baguette was apparently. ) They bake their own bread, make their own pastries and soup and roast their own meats. http://www.marigoldsrestaurant.com/

All those places make their own products and are independent and not franchises, which to me is very important. (Well, Great grains IS a franchise, woops!)

Kaleidoscope has a very good chicken caesar salad and bread with roasted garlic that is good. And excellent pizza too. Just expensive. http://www.kaleidoscopepizza.com/
There's also a really good Beer Brewery on the corner of Front Street and Sixth in the old Mellelos location. I can't remember the name of that place. The Portal? Not sure about the name. But I liked them. And the beer. I like porters. They have 'em.
There's also Downtown Market on East Main, that's kind of eclectic (?). They seem a bit for me....not sure http://www.downtownmarketco.com/

I know I'll be out of my rut by tomorrow! It's a toss up between Yellow Submarine or Cafe DeJenuner. I love sandwiches made by others. My family raves about my sandwiches but I never make one for myself. Thank you very much for all your input.

There is a brewery on Central called Brickyard(?) that has good beer and the cheeseburger and fries are excellent. Service is slow.
